The Employee Health and Wellness Improvement Committee at Stephens Memorial Hospital in Norway held an employee lunch and learn on healthy grilling, Mediterranean style. The lunch and learn was open to all employees to show how easy and delicious healthy grilling options can be. Chef Rebecca Lyons, director of dietary at Market Square Health Care Center, prepared a healthy meal which included flat bread, polenta, eggplant for babba ganoush and an assortment of vegetables on the grill. Lyons showed how to prepare the meal with all fresh ingredients from start to finish.
