AUBURN — Center Street is going caveman.
The owners of Tripp’s Primal Farm and Kitchen in Rumford Point plan to open a gluten-free bakery in the former Bread Shack. The back-to-the-basics motto for the 2-year-old farm: “Caveman approved.”
“We’re really hoping to put the convenience in it for people who want to eat paleo or primal, especially gluten-free,” Mark Tripp said Monday.
Plans have been in the works since September. He and wife, Jennifer, hope to open Tripp’s Primal Farm & Kafe at 1056 Center St. next month.
Most sales to date of their organically-raised poultry and pork, gluten-free goods and grain-free goods have been at farmers’ markets where they get a lot of customer feedback, Tripp said.
“It seems like a lot of people are finding they’re either gluten intolerant or grain intolerant and they’re just not willing to take the risk with people they don’t know,” he said.
The majority of the new shop will be bakery goods, specialties like gluten-free breads, grain-free muffins, cookies and the farm’s barbecue sauce. They also plan to offer salads, a soup and sandwich of the day, and meals to go, “something you can go home and pop in the oven, like a healthy ‘Hungry Man’ if you will,” Tripp said.
Tripp, an Auburn firefighter and baker, works with coconut flour and almond flour as gluten-free, grain-free alternatives.
“There’s just so many things when you know where your food is coming from and you know who is producing it,” he said.
