Here is a whole new version of French Fries – made with eggplant! Healthy baked eggplant parmesan ‘fries’ in a crispy panko breadcrumb and parmesan coating that are perfect for snacking!

Crispy Baked Eggplant Fries with Marinara Dipping Sauce
Servings: 2

Ingredients:
1 medium eggplant, cut into 1/4 inch thick ‘fries’
1/2 cup flour
2 eggs, lightly beaten
3/4 cup panko breadcrumbs
1/4 cup parmesan cheese, grated
1 teaspoon Italian seasoning
salt and pepper to taste
your favorite jarred tomato sauce or marina dipping sauce below

Directions:
1. Dredge the eggplant slices in the flour, dip them in the egg, and then into a mixture of the panko breadcrumbs, parmesan, thyme, salt, and pepper.
2. Place the eggplant slices on a wire rack on a baking sheet and bake in a preheated 425 degrees F oven until golden brown, about 7-10 minutes.

Ingredients:
1 tablespoon olive oil
3 cloves garlic, peeled and smashed
1 (15-ounce) can tomato sauce
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon Salt

Instructions:
1. Heat oil in a small saucepan over medium-high heat until shimmering. Add garlic cloves and sauté until browned, stirring occasionally to prevent scorching, about 3 to 4 minutes. Remove garlic and discard.
2. Stir in tomato sauce, basil, oregano, and salt. Reduce heat to medium and simmer until flavors have blended, about 10 minutes. Keep warm over low heat until serving time, or cool completely and store covered in the refrigerator.
