5-Ingredient Veggie Burrito
Got some leftover cooked rice in the fridge? Make a yummy burrito in a snap!
Serves 6
Ingredients:
2 cups fully cooked and warm brown rice
14/5 ounce can black beans (rinsed, drained and warmed)
4 ounces shredded cheddar cheese
1/2 cup pureed salsa
6 fajita-size whole wheat flour tortillas
Directions:
1. Preheat the oven to 375 degrees F.
2. Stir together all the ingredients except the tortillas in a medium bowl.
3. Warm each tortilla one by one in the microwave for about 10 seconds. Or wrap the whole stack in a damp paper towel and warm for about 30 seconds. Remove one at a time from the towels.
4. Add ½ cup of the bean and rice mixture to the center of each warmed flour tortilla (I use fajita size), fold in the sides, and roll up.
5. Place, seam-side-down, onto a parchment-lined baking sheet.
6. Warm them in the oven for about 8-10 minutes to warm through. (Or place, seam-side-down, in a greased pan over medium heat for about 2-3 minutes each, or for 30-60 seconds in the microwave.)
