Summer Spread for sliced veggies, whole grain crackers , toast or bagels
Prep Time: 10 min Yield: 4 servings
Ingredients:
4 ounces low fat cream cheese (whipped or softened (½ package)
1/2 carrot, coarsely shredded
1/2 red bell pepper. finely diced
2 green onions, finely chopped
1 tablespoon chopped fresh herbs (such as dill, thyme, oregano, basil) or 1 tsp dried
1 teaspoon freshly squeezed lemon or lime juice
Serve with: sliced veggies, whole grain crackers, toast or bagels
Directions:
1. Mix all ingredients with a rubber spatula until creamy.
Note: add a little greek yogurt for extra tang!
