ANSWER: Any crepe recipe using extra batter can turn the typical thin crepe into a thicker crepe. Another thought is that your mother and grandmother were making blinis or blintz hot cakes which are basically thick crepes. Here is a recipe for thick crepes from Rachel Ray’s magazine:
Cheese Blintz Hot Cakes
Ingredients:
2 eggs
1/2 Cup flour
1/4 Cup milk
1-1/2 Tbsp. sugar
1/4 tsp. baking powder
1 Cup cottage cheese
2 Tbsp. butter
Jam and confectioners’ sugar
Directions:
In blender, mix eggs, flour, milk, sugar and baking powder, 10 seconds. Add cottage cheese; blend until just incorporated. On griddle, heat butter over medium heat. Working in batches, spoon batter by 1/4 cupfuls onto griddle. Cook, flipping once, until golden, 5 minutes. Repeat with remaining batter. Top with jam; dust with sugar.
Many recipes suggest letting the batter sit on the counter for 30 minutes before making the crepes.
DEAR SUN SPOTS: I read recently in the Sun Journal about people, mostly Christians, fleeing for their lives from war-torn Syria and Iraq. It is said that such an exodus hasn’t been seen since World War II. Do you know of any organizations that are helping these people or of any way we can show our support for these individuals? Sincerely, No Name in Lewiston.
